From our Chili Feed September 2009
 
CHILI
 
1 1/2 - 2 pounds hamburger
1 medium onion, chopped
1 - 2 cloves garlic, chopped
salt & pepper to taste
1 large can whole tomatoes
2 small or 1 regular-size (~14 oz) can tomato sauce
1 small can chopped green chiles
1 can kidney beans, drained
1 can Red Hot Chili Beans, drained
2 T chili powder (more or less to taste - I usually add a bit more as it cooks)
 
Brown hamburger with onions and garlic; salt and pepper to taste.  Drain fat.  Place in large stock pot or crock pot.  Add rest of ingredients.  Bring to a boil, then simmer on medium to low heat for 3-4 hours.  The longer you let it simmer, the better the flavors blend.  I taste it once it starts to simmer and then add more salt, pepper and chili powder if needed.  If you like a hotter chili you can substitute the green chiles for jalepenios (we don't do this, but Shane's dad does once in a while - too hot for me).  ENJOY!
